Woman's tater recipe wins contest
A woman from Home has won the honor of best potato salad as judged in a contest to promote an upcoming performance by comedian Ron White.
In honor of White’s nickname, “Tater Salad,” the Kovalchick Convention and Athletic Complex partnered with the Indiana County Fair to host a tater salad contest on Saturday.
Eight local fans registered in August for a chance to win tickets to White’s performance at the KCAC on Nov. 13. Each contestant delivered four cups of their own original potato salad for culinary experts from Aramark to sample and a copy of their recipe. Each entry was scored based on appearance, taste and originality. Wendy Green, of Home, won by a landslide with a recipe so impressive that Kevin Hodgkinson, Aramark’s executive chef for Indiana University of Pennsylvania, says he plans to incorporate the recipe into his menu.
“When I heard about the contest, I immediately made up my mind that I had to take the opportunity to possibly win tickets because my husband is a big fan of Ron White,” Green said in a release.
Green said she enjoys the kitchen, but that she didn’t really have a potato salad recipe to submit, so she started discussing the theme with her husband and they came up with the idea of adding tater tots to the mix. The tater tots would reference the nickname Ron White gave to his son many years ago.

Ron White Tater Tot Tater Salad
3 medium-sized yellow potatoes boiled & cooked
6 hardboiled eggs cooked, peeled & chopped
1 cup tater tots, baked per bag instructions & cooled
½ cup chopped onions
¾ tsp celery salt
3 tsp mustard (yellow)
1 cup Miracle Whip dressing
7 tbsp zesty Italian dressing
¼ tsp black pepper
8 slices bacon, cooked crispy, cooled & chopped
Place chopped eggs in bowl with onions, celery salt, mustard, miracle whip, Italian dressing and black pepper. Mix well. Add ? of chopped bacon to mixture, saving ? of it for presentation when complete.
Mix well again, then add chopped potatoes and tater tots. Blend together and add decorative toppings — chopped bacon, bit of parsley or a little bit of paprika. Refrigerate until ready to serve.
Makes 4 cups.
